This Easy Burrito Casserole is a simple, satisfying, and crowd-pleasing dish that’s perfect for busy weeknights or casual gatherings. Layers of seasoned ground beef, tortillas, and melted cheese come together in a comforting casserole that’s topped with sour cream and fresh green onions for extra flavor. It’s like a burrito, but with all the convenience of a casserole!
Ingredients
1 pound ground beef
1 packet taco seasoning mix
1 cup salsa
10 small flour tortillas
2 cups shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped green onions (optional)
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C).
- Cook the beef: In a skillet, brown the ground beef over medium heat. Once browned, drain the excess fat.
- Add seasoning and salsa: Stir in the taco seasoning and salsa. Cook for about 5 minutes, allowing the mixture to heat through and the flavors to combine.
- Layer the casserole: In a 9×13-inch baking dish, layer 1/3 of the meat mixture at the bottom. Then, place 3 tortillas over the meat, tearing them to fit if necessary. Sprinkle 1/3 of the shredded cheese over the tortillas.
- Repeat the layers: Repeat the layering process two more times: another layer of meat, tortillas, and cheese, ending with cheese on top.
- Bake: Bake the casserole uncovered for 25-30 minutes, or until the cheese is melted and bubbly.
- Cool and serve: Let the casserole cool for 5 minutes before serving. Garnish with sour cream and chopped green onions, if desired.
