Ingredients

1/4 cup tapioca pearls

1/2 cup sugar

5 cups water (for boiling pearls)

1 cup water (for soaking pearls)

1 tbsp butterfly pea tea

1 cup water (for tea)

1/2 cup coconut milk

1 tsp sugar

1 cup ice


Instructions

  1. Cook the boba pearls: Boil 5 cups water, add tapioca pearls, cook on high 2 minutes, then simmer 20–25 minutes until chewy.
  2. Sweeten pearls: Drain, rinse under cold water, then soak in a syrup made by dissolving sugar in 1 cup water for 10–15 minutes.
  3. Brew butterfly pea tea: Steep tea in 1 cup hot water for 3–5 minutes, strain, and let cool.
  4. Assemble: Add sweetened boba to a glass, fill with ice, pour in coconut milk with a touch of sugar, then slowly pour cooled butterfly pea tea over ice for layers.
  5. Serve with a wide straw, stirring before drinking if desired.
