Ingredients
1 cup unsweetened coconut milk
1/2 cup raw pistachios, shelled
1 tablespoon almond butter
1 tablespoon chia seeds
1–2 tablespoons erythritol or preferred keto sweetener, to taste
1/2 teaspoon vanilla extract
Ice cubes, as needed
Instructions
- Combine coconut milk, pistachios, almond butter, chia seeds, erythritol (or preferred sweetener), and vanilla extract in a blender.
- Blend until smooth and creamy. Add more pistachios or ice cubes to achieve desired thickness.
- Pour into a glass, garnish with crushed pistachios for texture, and enjoy immediately!

- For added protein, mix in a scoop of low-carb protein powder.
