Ingredients
1 lb ground chicken
½ cup breadcrumbs
¼ cup grated Parmesan cheese
1 small onion, finely chopped
2 cloves garlic, minced
1 egg, beaten
¼ cup chopped fresh parsley
1 tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp ground cumin
½ tsp dried oregano
Oil for frying (vegetable or canola)
Instructions
- In a large bowl, combine all ingredients except oil; mix until well combined. Add breadcrumbs if mixture is too wet.
- Portion mixture and shape into small patties, then create a hole in the center to form mini ‘donuts’.
- Heat ~½” oil in a skillet over medium-high until hot.
- Fry chicken donuts in batches, 3–4 minutes per side, until golden and cooked through. Drain on paper towels.
- Serve warm with your favorite dipping sauces (ranch, spicy mayo, honey mustard).
Notes
- Stuff with a cube of cheese in the center before shaping for a cheesy surprise.
