16oz smoked salmon, cut into bite-sized pieces
1/4 cup capers
Handful of fresh dill
Salt + black pepper
Instructions
- Prepare the cucumbers: Slice the cucumbers into thick, even rounds to form a sturdy base for the bites.
- Add cashew cheese: Spread a generous layer of Spread ‘Em Cashew Cheese on each cucumber slice, covering the entire surface.
- Top with smoked salmon: Place a small, folded piece of smoked salmon on top of each cucumber bite.
- Garnish: Sprinkle capers and fresh dill over the salmon for a burst of flavor and a gourmet touch.
- Season: Lightly season with salt and black pepper to taste.
- Serve: Arrange the bites on a platter and serve immediately. These little bites will disappear quickly!
Notes
Add avocado: Top each cucumber bite with a slice of avocado for added creaminess and healthy fats.
Use different herbs: You can substitute the fresh dill with fresh parsley, chives, or tarragon for a different flavor.
Spicy twist: Add a thin slice of jalapeño or a sprinkle of red pepper flakes for a bit of heat.
Vegan version: Swap the smoked salmon for marinated tofu or roasted veggies for a fully plant-based version.
