Description

This refreshing Cucumber Agua Fresca is a light and hydrating Mexican beverage made with fresh English cucumbers, lime juice, mint leaves, and a hint of ginger. Perfect for hot days, it combines natural sweetness with citrus tartness and herbal notes, making it an ideal thirst quencher that’s easy to prepare in just minutes.

Ingredients

Ingredients

  • 2 large English cucumbers, cut into chunks
  • 1 cup freshly squeezed lime juice (from 8-10 limes)
  • 2/3 cup granulated sugar
  • 10-15 fresh mint leaves
  • 1 piece fresh ginger (1-2 inches), peeled
  • 4 cups water, divided

Instructions

  1. Prepare Ingredients: Cut the English cucumbers into chunks, peel the ginger piece, and juice 8-10 fresh limes to make 1 cup of lime juice. Gather fresh mint leaves.
  2. Blend Mixture: Add the cucumber chunks, lime juice, granulated sugar, mint leaves, ginger, and 2 cups of water into a blender jar. Cover and blend on high until the mixture is very smooth and well combined.
  3. Strain Liquid: Place a fine sieve over a large pitcher. Pour the blended mixture through the sieve to remove pulp and solids, pressing lightly to extract maximum liquid while leaving behind fibrous bits.
  4. Dilute and Chill: Add the remaining 2 cups of water to the strained liquid in the pitcher. Stir gently to combine. Cover and refrigerate the agua fresca until chilled, about 30 minutes or more, before serving.

Notes

  • You can adjust the amount of sugar depending on your sweetness preference or substitute with honey or agave syrup.
  • For a spicier note, leave the ginger pieces in longer when blending or add a small pinch of ground ginger.
  • To serve, pour over ice cubes and garnish with additional mint leaves or thin cucumber slices.
  • This drink is best served fresh but can be stored in the refrigerator for up to 2 days.
  • If you prefer a pulpy texture, strain the mixture less or skip straining altogether.
