Description

Ingredients

Cookie Dough:

1 ½ cups salted butter, softened

1 ½ cups granulated sugar

3 large eggs, room temperature

1 ½ teaspoons cake batter flavoring

4 ½ cups all-purpose flour (540g)

1 tablespoon baking powder

¼ cup rainbow sprinkles, plus more for topping

Cream Cheese Frosting:

8 ounces cream cheese, softened

¼ cup butter, softened

½ teaspoon cake batter flavoring

4 cups powdered sugar

12 tablespoons milk (as needed)


Instructions

  1. Preheat oven to 350 °F (175 °C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat butter and sugar with a hand mixer on medium speed until light and fluffy (2-3 minutes). Scrape the bowl as needed. Add eggs one at a time, then cake batter flavoring. Mix until combined.
  3. Gradually mix in flour and baking powder until just combined. Gently fold in sprinkles with a spatula.
  4. Portion dough into 1/3 cup balls. Flatten each ball to about 1 inch thick. Arrange 6 cookies per sheet with room to spread.
  5. Bake 15-18 minutes, or until edges are set and tops are no longer glossy. Let cookies cool for 10 minutes on sheets, then transfer to wire racks.
  6. For frosting, beat cream cheese, butter, and cake batter flavoring until smooth. Gradually add powdered sugar, mixing on low, then beat until smooth. Add milk to reach desired consistency.
  7. Pipe frosting onto cooled cookies and top with more sprinkles. Serve and enjoy!

Notes

  • For dairy-free, use plant-based butter and cream cheese, and plant-based milk in the frosting.
  • Add chocolate chips or other mix-ins for added flavor.
