Ingredients
Cookie Dough:
1 ½ cups salted butter, softened
1 ½ cups granulated sugar
3 large eggs, room temperature
1 ½ teaspoons cake batter flavoring
4 ½ cups all-purpose flour (540g)
1 tablespoon baking powder
¼ cup rainbow sprinkles, plus more for topping
Cream Cheese Frosting:
8 ounces cream cheese, softened
¼ cup butter, softened
½ teaspoon cake batter flavoring
4 cups powdered sugar
1–2 tablespoons milk (as needed)
Instructions
- Preheat oven to 350 °F (175 °C). Line two baking sheets with parchment paper or silicone mats.
- In a large bowl, beat butter and sugar with a hand mixer on medium speed until light and fluffy (2-3 minutes). Scrape the bowl as needed. Add eggs one at a time, then cake batter flavoring. Mix until combined.
- Gradually mix in flour and baking powder until just combined. Gently fold in sprinkles with a spatula.
- Portion dough into 1/3 cup balls. Flatten each ball to about 1 inch thick. Arrange 6 cookies per sheet with room to spread.
- Bake 15-18 minutes, or until edges are set and tops are no longer glossy. Let cookies cool for 10 minutes on sheets, then transfer to wire racks.
- For frosting, beat cream cheese, butter, and cake batter flavoring until smooth. Gradually add powdered sugar, mixing on low, then beat until smooth. Add milk to reach desired consistency.
- Pipe frosting onto cooled cookies and top with more sprinkles. Serve and enjoy!
Notes
- For dairy-free, use plant-based butter and cream cheese, and plant-based milk in the frosting.
- Add chocolate chips or other mix-ins for added flavor.
- To store, keep cookies in an airtight container for up to 4 days.
- Freeze dough balls on a baking sheet, then store in a container for up to 2 months. Bake from frozen, adding a minute to the baking time.
