Ingredients
500 g extra‑lean beef mince
1 onion, finely chopped
2 garlic cloves, crushed
2 carrots, chopped
2 celery sticks, chopped
¾ cup (120 g) frozen peas
2 tbsp tomato paste
1 heaped tsp marmite (optional)
2 cups (480 ml) beef or veg stock
1 tsp thyme
Dash of balsamic vinegar
Salt and pepper to taste
1 kg potatoes, thinly sliced
Low-cal oil spray
Optional garnish: chopped parsley
Instructions
- Brown the beef with onion, garlic, carrots, celery, and thyme in a skillet.
- Stir in tomato paste, marmite, stock, and balsamic; simmer covered for ~10 min, seasoning to taste.
- Transfer mixture to an ovenproof dish; stir in peas.
- Layer thinly sliced potatoes on top and lightly spray with oil.
- Bake at 200 °C (400 °F) for ~45 minutes until potatoes are golden and crispy.
- Garnish with parsley and serve hot.
