Ingredients
8 oz enoki mushrooms, trimmed and separated into clusters
½ cup all-purpose flour
5 tablespoons cornstarch
¾ cup water
1 teaspoon salt
1 tablespoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon dried basil
½ teaspoon ground white pepper
½ teaspoon ground black pepper
½ teaspoon ground ginger
½ teaspoon ground mustard (optional)
Neutral oil for frying (vegetable, canola, sunflower)
Instructions
- Trim the root ends of enoki mushrooms and slice into slabs while keeping clusters intact.
- In a bowl, whisk together flour, cornstarch, all seasonings, and water until smooth and thick.
- Heat about 2 inches of oil in a frying pan to 350 °F (175 °C).
- Dip mushroom clusters in batter, allow excess to drip, and fry in batches for about 2 minutes until golden and crisp.
- Remove and drain on paper towels. Serve immediately with dipping sauce.
