Ingredients
4 chicken thighs (bone-in, skin-on)
1 tablespoon vegetable oil
2–3 garlic cloves, peeled and smashed
½ cup chicken broth
2 tablespoons lime juice
2 teaspoons honey (or maple syrup)
3 tablespoons unsalted butter
Salt and freshly ground black pepper, to taste
Optional: lime wedges, fresh cilantro or parsley for garnish
Instructions
- Sprinkle both sides of the chicken thighs with salt and pepper, and let sit for 10 minutes. Pat dry thoroughly.
- Heat a skillet over medium heat. Add vegetable oil and place chicken thighs skin-side down. Cook undisturbed for 20–25 minutes until golden and crispy.
- Flip and continue cooking until fully cooked. Add garlic in the last few minutes to toast. Transfer chicken to a plate.
- Pour off excess fat, leaving about 3 tablespoons. Add chicken broth, lime juice, and honey. Simmer on high to reduce by half.
- Stir in butter until the sauce becomes glossy. Season with salt and pepper to taste.
- Return chicken to skillet or pour sauce over plated chicken. Garnish with lime wedges and herbs if desired.
