Ingredients

For the Lettuce Wraps

  • Lettuce leaves (petite romaine or butter lettuce), 1-2 leaves per wrap
  • Chicken breast tenders, cooked crispy (air fried, grilled, or roasted), quantity as needed
  • Crispy parmesan crisps (see recipe below), 4-5 pieces per wrap
  • Fresh basil or green onions, for garnish
  • Black pepper, to taste

For the Parmesan Crisps

  • 2 oz Parmesan cheese, finely grated

For the Caesar Dressing

  • ¾ cup mayo (preferably Kewpie mayo)
  • 1 teaspoon Dijon mustard
  • 1-2 cloves garlic, roughly chopped
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon anchovy paste
  • 2 tablespoons lemon juice
  • ½ cup freshly grated Parmesan cheese (about 1 oz)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons extra virgin olive oil


Instructions

  1. Prepare Parmesan Crisps: Preheat your oven to 400°F (200°C). Line a small baking sheet with parchment paper. Spread the finely grated Parmesan cheese in a thin, even layer on the parchment. Bake for 12 minutes until the cheese turns golden brown. Allow them to cool so they crisp up, then break into pieces to use in the wraps.
  2. Make Caesar Dressing: In a small blender or food processor, combine mayo, Dijon mustard, garlic cloves, Worcestershire sauce, anchovy paste, lemon juice, freshly grated Parmesan, salt, pepper, and olive oil. Blend until smooth and creamy. Adjust thickness with a tablespoon or two of water if necessary. Taste and tweak the seasoning or lemon juice according to your preference.
  3. Cook Chicken: Prepare chicken tenders as desired—air frying is recommended for maximum crispiness, but grilling or roasting works well too. Cook according to your package or recipe instructions until cooked through and crispy.
  4. Assemble Wraps: Take 1-2 lettuce leaves per wrap and spread a dollop of Caesar dressing on each. Layer a piece of crispy chicken on top, followed by 4-5 parmesan crisps.
