Description

Creamy Tuscan Shrimp is a delicious and quick skillet-based dish featuring tender shrimp cooked in a rich, garlicky cream sauce with sun-dried tomatoes, fresh spinach, and basil. This flavorful recipe comes together in just 15 minutes, making it perfect for a weeknight dinner that feels both luxurious and comforting.

Ingredients

Shrimp

  • 1 pound shrimp (31-40 count size), thawed and peeled

For the Sauce

  • 2 tablespoons butter
  • 1 teaspoon all-purpose flour
  • 4-5 cloves garlic, minced
  • 1 cup heavy whipping cream
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon Italian seasoning
  • 1/4 cup sun-dried tomatoes, chopped or julienned (packed in oil, drained)

Greens & Herbs

  • 1-2 cups fresh baby spinach, packed
  • Handful fresh basil, cut into thin strips

Seasoning

  • Salt and pepper to taste

Instructions

  1. Melt Butter and Make Roux: Melt the butter over medium-high heat in a large skillet. Add the flour and cook for about 1 minute, stirring constantly until the mixture is smooth and slightly thickened.
  2. Sauté Garlic: Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, ensuring the garlic does not burn.
  3. Add Cream and Flavorings: Stir in the heavy cream, lemon juice, Italian seasoning, and chopped sun-dried tomatoes. Allow the mixture to simmer gently for 2 minutes, reducing heat if the sauce bubbles too vigorously.
  4. Cook Shrimp: Add the shrimp to the skillet and cook for approximately 5 minutes, or until the shrimp turn opaque and the sauce thickens slightly. Take care not to overcook the shrimp to maintain their tenderness.
  5. Add Greens and Herbs: Stir in the fresh spinach and basil, cooking for an additional 2 minutes until the spinach wilts and the flavors meld together.
  6. Season and Serve: Season with salt and pepper to taste. Serve immediately with an optional squeeze of fresh lemon juice or a sprinkle of grated Parmesan cheese if desired.
