Ingredients
Shrimp
- 1 pound shrimp (31-40 count size), thawed and peeled

For the Sauce
- 2 tablespoons butter
 - 1 teaspoon all-purpose flour
 - 4-5 cloves garlic, minced
 - 1 cup heavy whipping cream
 - 1/2 teaspoon lemon juice
 - 1/4 teaspoon Italian seasoning
 - 1/4 cup sun-dried tomatoes, chopped or julienned (packed in oil, drained)

Greens & Herbs
- 1-2 cups fresh baby spinach, packed
 - Handful fresh basil, cut into thin strips

Seasoning
- Salt and pepper to taste

Instructions
- Melt Butter and Make Roux: Melt the butter over medium-high heat in a large skillet. Add the flour and cook for about 1 minute, stirring constantly until the mixture is smooth and slightly thickened.
 - Sauté Garlic: Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, ensuring the garlic does not burn.
 - Add Cream and Flavorings: Stir in the heavy cream, lemon juice, Italian seasoning, and chopped sun-dried tomatoes. Allow the mixture to simmer gently for 2 minutes, reducing heat if the sauce bubbles too vigorously.
 - Cook Shrimp: Add the shrimp to the skillet and cook for approximately 5 minutes, or until the shrimp turn opaque and the sauce thickens slightly. Take care not to overcook the shrimp to maintain their tenderness.
 - Add Greens and Herbs: Stir in the fresh spinach and basil, cooking for an additional 2 minutes until the spinach wilts and the flavors meld together.
 - Season and Serve: Season with salt and pepper to taste. Serve immediately with an optional squeeze of fresh lemon juice or a sprinkle of grated Parmesan cheese if desired.

- Sun-dried tomatoes used in this recipe are packed in oil; it’s recommended to drain the oil before using.
