Ingredients

12 oz spicy Italian sausage

1 tablespoon olive oil

1 tablespoon Italian seasoning

1 teaspoon paprika (regular or smoked)

1 large sweet potato, peeled and cubed

5 cloves garlic, minced

¼ teaspoon red pepper flakes

1 tablespoon tomato paste

6 cups water

8 oz refrigerated cheese tortellini

4 oz fresh spinach

½ cup heavy cream

4 tablespoons fresh thyme (plus extra for garnish)

Salt, to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until no longer pink. Drain excess grease. Stir in Italian seasoning and paprika.
  2. Add sweet potato, garlic, red pepper flakes, and tomato paste. Stir to combine.
  3. Pour in 6 cups of water, stir to dissolve tomato paste, and bring to a boil. Reduce heat and simmer for 15 minutes, until sweet potatoes are tender.
  4. Add tortellini to the pot. Cover and simmer for 10 minutes, or until pasta is tender.
  5. Stir in spinach until wilted. Remove from heat and stir in cream and fresh thyme.
  6. Taste and season with salt if needed. Garnish with extra thyme or red pepper flakes and serve hot.
