Ingredients
1 onion, chopped
1 leek (white and light green part only), chopped
1 large carrot, chopped
4 garlic cloves, minced
1 tablespoon Italian seasoning
Salt and pepper, to taste
Fresh thyme sprigs
2 tablespoons flour
1 cup dry white wine
4 cups chicken stock
2 cups water
Parmesan cheese and rind
7–9 lasagna noodles, broken into pieces
1 cup chopped rotisserie chicken
1 cup heavy cream
¾ cup shredded mozzarella cheese
1–2 cups chopped spinach
Fresh basil, for garnish
Instructions
- Heat olive oil and butter in a large pot. Sauté onion, leek, carrot, and garlic until softened. Season with Italian seasoning, salt, and pepper.
- Stir in flour and cook for 1–2 minutes. Deglaze with white wine, stirring for 2 minutes.
- Add chicken stock, water, parmesan rind, and thyme. Bring to a boil, then simmer partially covered for 20 minutes.
- Remove parmesan rind and thyme sprigs. Break lasagna noodles into pieces and add to the pot. Cook until al dente.
- Stir in heavy cream, mozzarella, chicken, and spinach. Cook until heated through and spinach is wilted.
- Serve hot, topped with parmesan and fresh basil.

- Use ground chicken, turkey, or sausage instead of rotisserie chicken.
- Add mushrooms, zucchini, or bell peppers for extra vegetables.
- Substitute ricotta for mozzarella for a creamier texture.
