Description

Creamy Chicken Lasagna Soup combines all the comforting flavors of lasagna—tender noodles, cheesy richness, and savory chicken—into a hearty one-pot soup. With parmesan, spinach, and rotisserie chicken, this creamy soup is cozy, family-friendly, and perfect for weeknight dinners.


Ingredients

1 onion, chopped

1 leek (white and light green part only), chopped

1 large carrot, chopped

4 garlic cloves, minced

1 tablespoon Italian seasoning

Salt and pepper, to taste

Fresh thyme sprigs

2 tablespoons flour

1 cup dry white wine

4 cups chicken stock

2 cups water

Parmesan cheese and rind

79 lasagna noodles, broken into pieces

1 cup chopped rotisserie chicken

1 cup heavy cream

¾ cup shredded mozzarella cheese

12 cups chopped spinach

Fresh basil, for garnish


Instructions

  1. Heat olive oil and butter in a large pot. Sauté onion, leek, carrot, and garlic until softened. Season with Italian seasoning, salt, and pepper.
  2. Stir in flour and cook for 1–2 minutes. Deglaze with white wine, stirring for 2 minutes.
  3. Add chicken stock, water, parmesan rind, and thyme. Bring to a boil, then simmer partially covered for 20 minutes.
  4. Remove parmesan rind and thyme sprigs. Break lasagna noodles into pieces and add to the pot. Cook until al dente.
  5. Stir in heavy cream, mozzarella, chicken, and spinach. Cook until heated through and spinach is wilted.
  6. Serve hot, topped with parmesan and fresh basil.

  • Use ground chicken, turkey, or sausage instead of rotisserie chicken.
  • Add mushrooms, zucchini, or bell peppers for extra vegetables.
  • Substitute ricotta for mozzarella for a creamier texture.
