Description

Cranberry Walnut Pinwheels are a delightful and easy-to-make appetizer featuring a creamy blend of goat and cream cheese combined with sweet dried cranberries, fresh rosemary, and crunchy walnuts, all wrapped in soft flour tortillas. Perfect for holiday parties or any gathering, these pinwheels offer a perfect balance of sweet, savory, and nutty flavors with a creamy texture.

Ingredients

Cheese Mixture

  • 8 ounces cream cheese, softened
  • 4 ounces crumbled goat cheese
  • 2 tablespoons honey
  • 1 tablespoon fresh minced rosemary

Mix-ins

  • 1 1/2 cups dried cranberries, roughly chopped
  • 2/3 cup finely chopped walnuts

Assembly

  • 3 10-inch flour tortillas

Instructions

  1. Prepare the cheese mixture: In a medium-sized bowl, beat the softened cream cheese, crumbled goat cheese, and honey together until smooth and well combined. Then, gently fold in the roughly chopped dried cranberries, fresh minced rosemary, and finely chopped walnuts until evenly distributed throughout the mixture.
  2. Assemble the pinwheels: Lay one flour tortilla flat on a clean surface. Evenly spread one third of the cheese mixture over the tortilla, leaving about a 1/2-inch border on one edge free of filling. Starting at the edge with the filling, gently roll the tortilla up tightly, pressing toward the open edge to create a firm log. Wrap the rolled tortilla tightly in plastic wrap to maintain its shape and moisture. Repeat this process for the remaining two tortillas and cheese mixture.
  3. Chill the rolls: Place the wrapped tortilla logs in the refrigerator and chill for at least one hour, or up to 24 hours. This step helps firm up the filling, making slicing easier and enhancing flavor melding.
  4. Slice and serve: Remove the chilled rolls from the refrigerator and unwrap them. Using a sharp serrated knife, slice each log into 1-inch-wide pinwheel pieces. Arrange the pinwheels neatly on a serving plate and serve immediately or keep chilled until ready to serve.

Notes

  • You can substitute pecans or almonds for walnuts if preferred.
  • Fresh rosemary adds a lovely herbaceous note, but dried rosemary can be used if necessary; reduce quantity to about 1 teaspoon and crush it finely.
  • Try using whole wheat or spinach tortillas for a different flavor and added nutrition.
  • These pinwheels are best served chilled but can be brought to room temperature for about 10 minutes before serving if desired.
  • Store leftovers tightly wrapped in the refrigerator and consume within 2 days for optimal freshness.
