Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 1 tbsp Italian seasoning
- 1/2 cup gluten-free all-purpose flour
- 1 tsp baking powder
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup marinara sauce
- 12 turkey pepperoni slices, chopped into pieces
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, combine the cottage cheese, eggs, Italian seasoning, gluten-free flour, baking powder, and half of the shredded mozzarella cheese. Mix until fully combined.
- Using a cookie scoop or spoon, portion the mixture into 9 equal buns on the prepared baking sheet. Press each bun down slightly to form a flat surface.
- Spoon marinara sauce on top of each bun, then sprinkle with the remaining mozzarella cheese and add the chopped turkey pepperoni (or your favorite toppings).
- Bake for 25 to 28 minutes, or until the buns are golden and the cheese is melted and bubbly.
