Ingredients
1 cup cottage cheese (Good Culture brand recommended)
½ cup pickles (dill or bread and butter)
1 clove garlic
1 jalapeno pepper (optional)
Fresh herbs for garnish (optional)
Instructions
- In a small food processor or high-speed blender, add the garlic clove and cottage cheese. Blend until smooth and creamy.
- Add the pickles and jalapeno (if using) and pulse until the pickles and jalapeno are chopped into small pieces, but still maintain a bit of texture.
- If the dip is too thick, add a tablespoon or two of pickle juice to adjust the consistency to your liking.
- Spoon the dip into a bowl and garnish with fresh herbs if desired. Serve with veggies, crackers, or use as a spread.
- Store leftovers in an airtight container in the fridge for up to 3-4 days.
