Description

Ingredients

1 cup cottage cheese (Good Culture brand recommended)

½ cup pickles (dill or bread and butter)

1 clove garlic

1 jalapeno pepper (optional)

Fresh herbs for garnish (optional)


Instructions

  1. In a small food processor or high-speed blender, add the garlic clove and cottage cheese. Blend until smooth and creamy.
  2. Add the pickles and jalapeno (if using) and pulse until the pickles and jalapeno are chopped into small pieces, but still maintain a bit of texture.
  3. If the dip is too thick, add a tablespoon or two of pickle juice to adjust the consistency to your liking.
  4. Spoon the dip into a bowl and garnish with fresh herbs if desired. Serve with veggies, crackers, or use as a spread.
  5. Store leftovers in an airtight container in the fridge for up to 3-4 days.
