Instructions
- Preheat: Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish with oil or cooking spray to prevent sticking.
- Sauté Vegetables: Heat the olive oil in a skillet over medium heat. Add the diced onion and bell peppers and sauté for 3-5 minutes until they begin to soften.
- Wilt Spinach and Garlic: Stir in the chopped spinach and minced garlic, cooking for an additional minute until the spinach wilts and the garlic becomes fragrant. Remove from heat and let the mixture cool slightly.
- Whisk Egg Mixture: In a large bowl, whisk together the eggs, cottage cheese, Dijon mustard, garlic powder, paprika, and salt until the mixture is smooth. For an extra creamy texture, you can use an immersion blender to gently blend just until combined, avoiding over-mixing.
- Combine: Stir the sautéed vegetable mixture and half of the shredded cheddar cheese (1 cup) into the egg mixture until evenly distributed.
- Pour into Dish: Pour the entire mixture into the prepared casserole dish, spreading it evenly. Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top.
