Description

Corn Black Bean Salsa is a fresh and colorful mix of sweet corn, earthy black beans, vibrant vegetables, and zesty citrus—perfect for dipping or topping tacos, bowls, and grilled dishes.

Ingredients

2 cups frozen corn, thawed

1 cup black beans, drained and rinsed

¼ cup cilantro, finely chopped

¼ cup red onion, finely chopped

2 tablespoons jalapeño, finely diced (optional)

¼ cup red bell pepper, finely diced

2 teaspoons lime juice

2 teaspoons lemon juice

½ teaspoon salt

Instructions

  1. In a large bowl, combine thawed corn, black beans, cilantro, red onion, jalapeño (if using), and red bell pepper.
  2. Add lime juice, lemon juice, and salt. Stir until evenly coated.
  3. Cover and refrigerate for at least 30 minutes (or overnight) to allow flavors to meld.
  4. Serve chilled with tortilla chips or use as a topping for tacos, bowls, grilled meats, or salads.

Notes

  • Add diced avocado just before serving for creaminess.
  • Use fresh or grilled corn for extra flavor.
  • Stir in chopped tomatoes or cucumber for variety.
  • Substitute parsley for cilantro if preferred.
  • Add a splash of olive oil or pinch of cumin for depth.
