Ingredients
2 cups warm milk
1 1/2 tablespoons yeast
1/4 cup brown sugar
4 tablespoons butter, melted
2 teaspoons salt
4 1/2 cups flour (more or less as needed)
1/3 cup baking soda
3 cups warm water
4 tablespoons butter, melted (for topping)
1/2 cup sugar

Instructions
- In a large bowl or the bowl of a stand mixer, dissolve the yeast in warm milk. Let it sit for 5 minutes until bubbly and foamy.
- Add brown sugar, melted butter, 1 cup of flour, and salt to the yeast mixture. Mix until well combined.
- Gradually add the remaining flour, one cup at a time, mixing until a smooth, slightly sticky dough forms. Add more or less flour as needed.
- Cover the bowl with plastic wrap or a towel and let the dough rise for 1 hour, or until it has doubled in size.
- Preheat the oven to 450°F (230°C) and line two baking sheets with parchment paper.
- After the dough has risen, divide it into 12 equal pieces. Roll each piece into a long rope (18-24 inches) and twist into a pretzel shape.
- In a medium bowl, mix warm water and baking soda until dissolved. Dip each pretzel into the baking soda solution for a few seconds, then place on the prepared baking sheets.
- Bake for 7-11 minutes, or until the pretzels are golden brown. Keep an eye on them to avoid overbaking.
- While the pretzels are baking, mix sugar and cinnamon in a shallow dish.
- Once baked, remove the pretzels from the oven and brush with melted butter. Immediately dip them into the cinnamon-sugar mixture, coating them thoroughly.
- Serve the pretzels warm. Enjoy as a snack or dessert, and pair with dipping sauces like chocolate or caramel.
