Description

Cinnamon Baked French Toast is a make-ahead breakfast casserole with chunks of crusty bread soaked in a sweet vanilla custard and topped with a buttery cinnamon-sugar crumble. Baked until golden, it’s perfect for holiday brunches or cozy weekend mornings.


Ingredients

French Toast

Butter, for greasing

1 loaf crusty sourdough or French bread

8 whole eggs

2 cups whole milk

1/2 cup heavy cream

1/2 cup granulated sugar

1/2 cup brown sugar

2 tbsp vanilla extract

Topping

1/2 cup all-purpose flour

1/2 cup firmly packed brown sugar

1 tsp ground cinnamon

1/4 tsp salt

Freshly grated nutmeg, to taste

1 stick cold butter, cut into pieces

Additional butter, for serving

Warm pancake syrup, for serving

1 cup fresh blueberries, for serving


Instructions

  1. Grease a baking pan with butter. Tear or cube bread and arrange in the pan.
  2. In a large bowl, whisk eggs, milk, cream, granulated sugar, brown sugar, and vanilla. Pour evenly over bread. Cover and refrigerate overnight or at least several hours.
  3. For the topping, mix flour, brown sugar, cinnamon, salt, and nutmeg in a bowl. Cut in butter until crumbly. Store in a bag in the fridge until ready to use.
  4. Preheat oven to 350°F (177°C). Sprinkle topping evenly over bread.
  5. Bake 45 minutes for a softer texture or 1 hour+ for a firmer, crispier texture.
  6. Scoop into portions, top with butter, drizzle with syrup, and add fresh blueberries.

  • Add raspberries or blackberries for a berry swirl.
  • Sprinkle chopped pecans or walnuts into the topping for crunch.
  • Add chocolate chips for a dessert-style brunch.
  • Swap some sugar for maple syrup for a maple twist.
