Description

Ingredients

1 ½ cups chopped strawberries

1 cup plain Greek yogurt

1 tablespoon honey

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

2 tablespoons coconut oil


Instructions

  1. Prepare the Yogurt Mixture:

    • In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Stir well to combine thoroughly.

  2. Form the Clusters:

    • Scoop about 2 tablespoons of the yogurt mixture and drop them onto a parchment paper-lined baking sheet or large plate. Form the yogurt mixture into 10 clusters.

  3. Freeze the Clusters:

    • Place the baking sheet with the yogurt clusters in the freezer and freeze for 1-2 hours, or until completely frozen and solid.

  4. Melt the Chocolate:

    • In a microwave-safe bowl, add the semi-sweet chocolate chips and coconut oil. Microwave in 15 or 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.

  5. Dip the Clusters in Chocolate:

    • Remove the frozen yogurt clusters from the freezer. Using a spoon, carefully dip each yogurt cluster into the melted chocolate, making sure they’re thoroughly coated. Place each coated cluster back on the parchment paper-lined baking sheet.

  6. Set the Chocolate:

    • Once all the clusters are coated, place the baking sheet back into the freezer for a few minutes to ensure the chocolate hardens and the yogurt solidifies a bit.
