Description

Indulge in these decadent Chocolate Covered Cherry Brownie Truffles, a delightful treat combining rich, fudgy brownies with sweet maraschino cherries, cherry cream cheese frosting, and a smooth chocolate coating. Perfect for parties or as a luxurious dessert, these truffles offer a burst of cherry flavor with every bite and a melt-in-your-mouth chocolate shell.

Ingredients

Brownie Base

  • 1 13 x 9 inch pan of brownies (homemade or boxed mix)

Filling and Frosting

  • 10-12 oz maraschino cherries, stems removed
  • 1/2 to 3/4 cup cherry cream cheese frosting
  • 6 oz softened cream cheese
  • 4 tablespoons (1/2 stick) unsalted butter, softened
  • 4 tablespoons maraschino cherry juice
  • 1 3/4 cups powdered sugar
  • Pinch of salt
  • Milk, half & half, or heavy whipping cream as needed

Chocolate Coating

  • 14-16 oz melting wafers or chocolate almond bark

Instructions

  1. Prepare Brownies: Bake a 13 x 9 inch pan of brownies using your favorite recipe or a boxed mix. Allow the brownies to cool completely before proceeding.
  2. Break Brownies: Using a spoon and your hands, break the cooled brownies into very small pieces and transfer them to a mixing bowl.
  3. Mix with Frosting: Add the cherry cream cheese frosting to the brownie pieces. Mix thoroughly until the texture is consistent and pliable enough to form balls.
  4. Form Truffle Balls: Take about 1 tablespoon of the brownie mixture and flatten it in the palm of your hand. Place one de-stemmed maraschino cherry in the center and carefully form the brownie mixture around the cherry, shaping it into a ball.
  5. Chill Balls: Place each formed ball onto parchment paper. Once all are formed, refrigerate the balls for 1 hour to allow them to harden.
  6. Melt Chocolate: Prior to removing the balls from the fridge, melt the chocolate wafers in the microwave. Heat in 30-second increments, stirring between each until smooth and fully melted.
  7. Coat Truffles: Remove the balls from the refrigerator and gently re-roll each to perfect their round shape. Dip each ball into the melted chocolate, fully coating it. Lift it out and allow any excess chocolate to drip off.
  8. Set Coating: Place the coated truffles onto clean parchment paper or aluminum foil. Let them cool and harden, about 5-10 minutes, until the chocolate shell is set.

Notes

  • Use cherries without stems for easier truffle formation.
  • Adjust the amount of cherry cream cheese frosting to achieve a consistency that holds together well without being too sticky.
  • If the chocolate coating thickens, gently reheat in short increments to maintain a smooth texture for dipping.
  • Store the truffles in an airtight container in the refrigerator to keep fresh for up to one week.
  • For added texture, consider rolling the truffles in crushed nuts or sprinkles before the chocolate sets.
