Flaky, golden parathas wrapped around smoky, spiced chicken tikka, creamy yogurt mayo, tangy chutneys, and fresh herbs. These handheld rolls combine the best of street food flavor with the comfort of homemade cooking.
Ingredients
Chicken Tikka:
1 lb chicken tenders, cubed
4 tbsp plain yogurt
2 tbsp lemon juice
1 tbsp olive oil
2 tsp ginger & garlic paste
1–1 1/2 tsp salt (to taste)
1 tsp cumin powder
1 tsp coriander powder
1–2 tsp chili powder (or cayenne)
1/2 tsp chaat masala
1/4 tsp garam masala
1/4 tsp turmeric powder
Optional: 1/4 tsp orange food coloring
Yogurt Mayo Sauce:
1/2 cup plain yogurt
1/4 cup mayonnaise
1/2 tsp garlic powder
1/2 tsp cayenne or chili powder
1/2 tsp paprika
Green Chutney:
1 cup fresh cilantro
1/2 cup fresh mint leaves
1 tsp cumin seeds
1–2 green chilies
2 garlic cloves
1/4 tsp salt
1/4 cup yogurt
2–4 tbsp water (as needed)
Assembly:
6 frozen parathas
Tamarind chutney
1/4 onion, thinly sliced
2 tbsp fresh cilantro, chopped
Instructions
- Chicken Tikka: Mix chicken with all marinade ingredients, cover, and refrigerate for at least 1 hour. Preheat oven to broil, place rack at top. Thread chicken on skewers and broil 6 inches from heat for 7–8 minutes per side until charred and cooked through. Rest 5 minutes, remove from skewers, chop into bite-sized pieces, and toss in cooking juices.
- Yogurt Mayo Sauce: Mix yogurt, mayonnaise, garlic powder, cayenne, and paprika until smooth. Set aside.
- Green Chutney: Blend cilantro, mint, cumin seeds, green chilies, garlic, salt, yogurt, and water to desired consistency.
- Assembly: Cook parathas until golden and flaky. Spread yogurt mayo on each paratha, add chicken tikka pieces, sliced onion, drizzle with green and tamarind chutneys, sprinkle cilantro, and roll tightly. For extra crispiness, air fry rolls at 160°C (325°F) for 3–4 minutes before serving.
Notes
- Swap chicken for paneer or tofu for a vegetarian version.
- Add lettuce, cucumber, or pickled onions for crunch.
- Use wholewheat parathas for extra fibre.
- Replace yogurt mayo with raita for a lighter sauce.
