Chicken Taco Mason Jar Salads are a convenient, healthy, and customizable way to enjoy a taco salad on the go. Packed with protein, fiber, and all your favorite taco flavors, these portable salads are perfect for meal prepping or quick lunches. They stay fresh in the fridge, making them an ideal option for a week’s worth of meals.
Ingredients
2 cups cooked chicken breast, shredded
1 can black beans (15 oz), drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 cup cherry tomatoes, halved
1 cup shredded lettuce or mixed greens
½ cup shredded cheese (cheddar, Mexican blend, or your preference)
1 avocado, diced
¼ cup red onion, thinly sliced
¼ cup fresh cilantro, chopped
1–2 tablespoons taco seasoning (or to taste)
2 tablespoons olive oil
2 tablespoons lime juice
Salt and pepper, to taste
Instructions

Layer the Ingredients:
Begin with the dressing at the bottom of the mason jar. Combine olive oil, lime juice, taco seasoning, salt, and pepper in a small bowl and stir to combine. Pour the dressing into the bottom of each mason jar. -
Add the Protein:
Layer the shredded chicken on top of the dressing. -
Add the Beans and Corn:
Next, add the black beans and corn over the chicken layer. -
Vegetables and Greens:
Add the halved cherry tomatoes, red onion slices, and chopped cilantro. Then, top with the shredded lettuce or mixed greens. -
Top with Cheese and Avocado:
Finish by adding the shredded cheese and diced avocado on top. Seal the jar tightly.

Store and Serve:
Store the mason jars in the fridge for up to 4 days. When ready to serve, simply shake the jar to combine the ingredients or pour it into a bowl.
Notes
You can substitute grilled chicken with ground beef, turkey, or even a plant-based protein for a variation.
If you prefer a spicier salad, add sliced jalapeños or a dash of hot sauce to the layers.
If you’re meal prepping for the week, mason jar salads should stay fresh for up to 4 days when stored properly in the fridge.
Feel free to swap in your favorite toppings like sour cream, salsa, or tortilla strips just before serving.
