This Chicken & Cheese Tortilla Pie is a simple, flavorful, and comforting dish that brings together tender rotisserie chicken, cheesy goodness, and the deliciously bold flavors of green enchilada sauce. It’s perfect for a weeknight dinner, and its layers of corn tortillas, chicken, and cheese will satisfy even the heartiest of appetites.
Ingredients
1 can (10 ounces) green enchilada sauce
8 corn tortillas (6 inches)
2 cups coarsely shredded rotisserie chicken
2 cups shredded cheddar cheese
1/4 cup sliced ripe olives
Salsa, optional
Instructions
- Preheat your oven to 375°F.
- In a small skillet, warm the green enchilada sauce over medium heat.
- Dip four tortillas, one at a time, into the warm sauce to coat both sides. Arrange the tortillas on the bottom of a greased 9-inch pie plate, overlapping to fit.
- Layer the tortillas with 1 cup of shredded chicken, 1 cup of shredded cheddar cheese, and 2 tablespoons of sliced olives.
- Repeat the process with another layer of tortillas, followed by the remaining chicken, cheese, and olives.
- Pour the remaining enchilada sauce over the top of the pie. Sprinkle with the remaining cheese and olives.
- Bake for 10-15 minutes, or until the pie is heated through and the cheese is melted.
- If desired, serve the pie with salsa on the side for an extra burst of flavor.
Notes
- You can add sautéed bell peppers, onions, or spinach to the layers for extra nutrition and flavor.
- Add some chopped jalapeños or a sprinkle of cayenne pepper to the layers for some heat.
- Swap the cheddar cheese for Monterey Jack, pepper jack, or a blend of your favorite cheeses for a different flavor.
- Omit the chicken and add black beans or a mix of grilled vegetables for a delicious vegetarian version.
