Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tbsp olive oil

1 avocado, sliced

4 slices cheese (Swiss, cheddar, or provolone)

4 slices bread (sourdough, ciabatta, or your choice)

2 tbsp mayonnaise

1 tbsp Dijon mustard

1 small red onion, thinly sliced

1 tomato, sliced

Butter or olive oil, for grilling


Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken 6–7 minutes per side until cooked through. Rest 5 minutes, then slice thinly.
  2. Slice avocado, cheese, red onion, and tomato.
  3. Spread mayonnaise and Dijon mustard on each slice of bread.
  4. On two slices of bread, layer chicken, avocado, cheese, onion, and tomato. Top with remaining bread, mayo side down.
  5. Heat butter or olive oil in a skillet or grill pan. Cook sandwiches 3–4 minutes per side until golden and cheese is melted. Press lightly with a spatula for even melting.
  6. Cool 1 minute, then slice and serve warm.
