Ingredients
Chocolate Mixture
- ½ cup (113g) unsalted butter, cut into 6-8 slices
- 8 ounces (225g) quality semi-sweet chocolate, coarsely chopped
Brownie Batter
- ¾ cup (150g) firmly packed brown sugar
- ¼ cup (50g) granulated sugar
- 3 large eggs
- ½ teaspoon vanilla extract
- ¾ cup (90g) all-purpose flour
- ¼ teaspoon salt
- ½ cup (85g) semi-sweet chocolate chips
- 12 fresh Bing cherries, pitted and halved
Instructions
- Preheat the oven and prepare pan: Set your oven to 350ºF (177ºC). Line an 8″ or 9″ square baking dish with aluminum foil, making sure the foil extends over the sides for easy removal later. Set it aside.
- Melt butter and chocolate: In a medium saucepan over medium heat, melt the butter and coarsely chopped semi-sweet chocolate. Stir constantly until completely smooth. Remove from heat and let cool for about 10-15 minutes to prevent cooking the eggs in the next step.
- Combine sugars and eggs: Once the chocolate mixture has cooled, whisk in the brown sugar and granulated sugar until well blended and smooth. Add the eggs one at a time, whisking thoroughly after each addition to create a glossy batter. Stir in the vanilla extract.
- Fold in dry ingredients and mix-ins: Gently fold in the flour and salt until just combined, being careful not to overmix. Then fold in the semi-sweet chocolate chips and the halved Bing cherries evenly throughout the batter.
- Bake the brownies: Pour the batter into your prepared baking pan. Optionally, press a few additional cherry halves into the top for visual appeal. Bake in the preheated oven for 28-32 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs attached.
- Cool and serve: Remove the brownies from the oven and let them cool completely on a wire rack. Once cooled, lift the brownies out using the foil overhang and slice into 16 squares with a sharp knife. Store any leftovers tightly covered at room temperature for up to 5 days; they also freeze well for up to 3 months. Thaw before serving.
