Ingredients
Sweet Potatoes
- 3 lbs sweet potatoes, peeled
Sauce
- 2 tbsp avocado oil
- 2 shallots, diced
- 2 cloves garlic, minced
- 1/2 tsp nutmeg
- 1 tsp dried thyme
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 cup almond milk (or regular milk)
Topping
- 6 oz Gruyere cheese, shredded
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease an 8×11 inch baking dish to prevent sticking and help with easy cleanup.
- Slice Sweet Potatoes: Peel and thinly slice the sweet potatoes to about 1/8 inch thickness. Arrange the slices closely and slightly overlapping in the prepared baking dish to create even layers.
- Prepare Sauce: In a saucepan over medium-high heat, warm the avocado oil and sauté the diced shallots for about two minutes until fragrant. Add minced garlic, nutmeg, dried thyme, salt, and pepper, cooking for an additional 4-5 minutes until the shallots are softened and the flavors meld.
- Add Almond Milk: Remove the pan from heat and stir in the almond milk, creating a creamy, spiced sauce. Pour this mixture evenly over the layered sweet potatoes, ensuring every slice is coated well.
- Add Cheese: Sprinkle the shredded Gruyere cheese evenly over the top of the sweet potato layers to add a rich, melty topping.
- Bake Covered: Cover the baking dish with foil to keep moisture in, then bake for 40 minutes to allow the potatoes to cook through and absorb flavors.
- Bake Uncovered: Remove the foil and bake for an additional 20 minutes to let the cheese brown slightly and the dish firm up.
- Broil Cheese: Turn the oven to broil and place the dish under the broiler for about 4 minutes, watching carefully to brown the cheese perfectly without burning.
- Rest and Serve: Let the gratin sit at room temperature for 20 minutes to set before serving, which helps the dish firm and makes it easier to slice and enjoy.
Notes
- To save time, use a mandoline slicer to achieve even, thin potato slices.
- Almond milk can be substituted with regular milk or cream for a richer texture.
- Gruyere cheese can be replaced with Swiss or a mild cheddar as alternatives.
- Serve as a side dish to roasted meats or as a vegetarian main course.
