Ingredients
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
1 cup panko breadcrumbs
2 large eggs
Salt and pepper to taste

Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the shredded mozzarella and grated parmesan cheese. Mix them well until fully combined.
- In a separate bowl, whisk the two eggs with salt and pepper until well beaten.
- Scoop out the cheese mixture and roll it into golf ball-sized bites using your hands. Wet your hands slightly if the mixture is too sticky.
- Dip each cheese ball into the egg mixture, ensuring it’s fully coated, then roll it in the panko breadcrumbs until completely covered.
- Place the coated cheese bites on the prepared baking sheet. Bake for 15-20 minutes or until they are golden brown and crispy on the outside.
