Description

Cheese & Egg Cloud Keto Bread is a light and fluffy low-carb bread alternative perfect for keto lovers. Made primarily with eggs and cream cheese, this easy recipe creates soft, cloud-like bread perfect for sandwiches, burgers, or breakfast bites. Baking at a low temperature produces a golden, airy texture without density, making it an ideal gluten-free, grain-free bread substitute.

Ingredients

Basic Ingredients

  • 3 large eggs
  • 3 tbsp cream cheese (or Greek yogurt alternative)
  • ¼ tsp baking powder
  • Pinch of salt

Optional Add-ins

  • ½ tsp garlic powder
  • 1 tbsp grated parmesan cheese
  • Sprinkle of everything bagel seasoning

Instructions

  1. Preheat and Prep: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Separate the Eggs: Carefully separate the egg whites from the yolks into two clean bowls, ensuring no yolk contaminates the whites for proper whipping.
  3. Mix the Yolks: To the yolks, add cream cheese, baking powder, and salt. Blend until the mixture is smooth and creamy using a fork or hand mixer.
  4. Beat the Whites: Whip the egg whites with a mixer until stiff peaks form, meaning the peaks stand up firmly when the beaters are lifted.
  5. Combine (Gently!): Fold the whipped egg whites gently into the yolk mixture in batches, preserving as much air as possible to keep the batter light and fluffy.
  6. Scoop and Shape: Spoon the batter into 6 to 8 round mounds on the parchment-lined baking sheet, leaving space for slight spreading.
  7. Bake It Up: Bake for 25 to 30 minutes until the breads are golden and puffed. Avoid opening the oven frequently. Once out, let them cool for 5 to 10 minutes before transferring.

Notes

  • Ensure egg whites are free from yolk for optimal volume.
  • Whip egg whites to stiff peaks to achieve fluffiness.
  • Fold gently to preserve air and prevent deflation.
  • Always use parchment paper to avoid sticking.
  • Variations include adding shredded cheese, spices, vanilla, or using as mini pizza bases.
  • Store bread in an airtight container in the fridge for 3-4 days.
  • Freeze breads with parchment between each slice and reheat before serving.
