Pastry

  • 1 roll puff pastry (or homemade tart dough)

Filling

  • 3 medium onions (preferably red)
  • 2 tablespoons olive oil
  • 1 or 2 tablespoons water
  • 2 tablespoons good balsamic vinegar
  • 1 tablespoon brown sugar or honey
  • 100 g goat’s cheese (or fresh goat’s cheese)
  • Black pepper to taste

Egg Wash

  • 1 egg yolk
  • 1 teaspoon milk


Instructions

  1. Preheat the oven: Set your oven to 200°C (392°F) to ensure it reaches the right temperature while you prepare the tartlets.
  2. Caramelize the onions: Mince the onions finely. In a saucepan over low heat, sauté the onions with olive oil and 1 to 2 tablespoons of water for about 15 minutes, stirring occasionally to prevent burning. Once they begin to brown, add balsamic vinegar to deglaze the pan, then sprinkle in the brown sugar or honey. Stir well and continue to cook for an additional 10 minutes, letting the onions caramelize slowly while ensuring they do not stick to the pan. Once done, set aside to cool.
  3. Prepare the pastry bases: Roll out the puff pastry on a clean surface. Using a small conical glass, cut out discs from the dough. Place these discs on a baking sheet lined with parchment paper. Press the bottom of the glass gently on the center of each disc to form a slight border around the edges. Prick the center of each pastry disc with a fork to prevent it from puffing up excessively during baking, which keeps the filling in place.
  4. Apply egg wash: In a small bowl, mix the egg yolk with milk. Using a pastry brush, carefully brush the mixture around the edges of each pastry disc. This will give the crust a beautiful golden shine when baked.
  5. Assemble the tartlets: Spoon a tablespoon of the caramelized onions onto the center of each pastry disc. Top each with a slice or small piece of goat cheese. Finish by seasoning with freshly ground black pepper to your taste.
