Description

A buttery graham cracker crust filled with honey-sweetened mascarpone and topped with glossy caramelized figs and crunchy nuts for an elegant, make-ahead tart.


Ingredients

1½ cups (180 g) graham cracker crumbs or crushed buttery cookies

6 tbsp (85 g) unsalted butter, melted

2 tbsp (25 g) brown sugar

¼ tsp salt

1 cup (250 g) mascarpone cheese, room temperature

½ cup (120 ml) heavy cream

¼ cup (85 g) honey, plus extra for drizzling

1 tsp vanilla extract

2 tbsp (15 g) powdered sugar (optional)

68 fresh figs, halved

2 tbsp (30 g) brown sugar

1 tbsp (15 g) unsalted butter

1 tbsp (15 ml) honey

1 tsp lemon juice (optional)

¼ cup (30 g) toasted chopped pistachios or walnuts

Fresh mint leaves, for garnish


Instructions

  1. Preheat oven to 350 °F (175 °C). Combine graham crumbs, melted butter, brown sugar, and salt; press into a tart pan. Bake 8–10 minutes until lightly golden. Cool.
  2. Whisk mascarpone, honey, vanilla, and powdered sugar until smooth. Whip heavy cream to soft peaks; fold into mascarpone mixture.
  3. In a skillet over medium heat, melt butter with brown sugar, honey, and lemon juice. Add figs cut-side down; cook 2–3 minutes until glazed. Flip briefly. Cool slightly.
  4. Spread mascarpone filling into cooled crust. Arrange fig halves on top, pressing lightly. Drizzle extra honey and sprinkle nuts. Garnish with mint. Chill 1–2 hours.
  5. Slice with a sharp knife and serve chilled, adding a final honey drizzle if desired.

Notes

  • Use shortbread or Biscoff cookies for a different crust flavor.
  • Add a layer of orange zest or marmalade under the filling for brightness.
  • Substitute pears or peaches for figs when out of season.
  • Omit powdered sugar if honey provides enough sweetness.
