Description

Ingredients

2 tablespoons extra virgin olive oil

1 sweet onion, diced

1 red bell pepper, diced

3 cloves garlic, minced

1 pound ground chicken

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can red kidney beans, drained and rinsed

1 (28 oz) can fire-roasted diced tomatoes

1 cup vegetable broth

1 small to medium butternut squash, peeled and cubed into ½-inch pieces (about 4 cups)

3 tablespoons chili powder

1 tablespoon cumin

1 teaspoon cayenne pepper

1 teaspoon oregano

½ teaspoon sea salt

½ teaspoon black pepper


Instructions

  1. In a 6-quart Dutch oven, heat olive oil over medium-high heat.
  2. Add onion, red bell pepper, and garlic. Sauté 2–3 minutes until softened.
  3. Stir in ground chicken and cook until browned.
  4. Add chili powder, cumin, cayenne, oregano, salt, and black pepper. Stir to coat the chicken and vegetables.
  5. Stir in black beans, kidney beans, diced tomatoes, butternut squash, and vegetable broth.
  6. Bring to a simmer, cover, and cook 40–45 minutes, or until squash is tender and flavors meld.
  7. Serve hot with toppings such as shredded cheese, avocado, cilantro, or sour cream.
