Ingredients
1 large egg
1/3 cup mashed potato flakes
1/3 cup seasoned bread crumbs
1/8 teaspoon salt
1/8 teaspoon pepper
6 sea scallops (about 3/4 pound)
2 tablespoons all-purpose flour
2 tablespoons butter
1 tablespoon canola oil
Instructions
- In a shallow bowl, lightly beat the egg. In another bowl, toss the mashed potato flakes and bread crumbs with salt and pepper. In a third bowl, toss the scallops with flour to lightly coat them.
- Dip each scallop into the flour, then into the beaten egg, and finally into the potato-flake and bread crumb mixture. Pat the crumbs onto the scallops to ensure they adhere well.
- In a large skillet, heat the butter and canola oil over medium heat. Add the breaded scallops to the pan and cook for 2-3 minutes per side, or until golden brown and firm to the touch. The scallops should be opaque in the center when fully cooked.
- Remove the scallops from the skillet and serve immediately.
Notes
- Add fresh herbs like parsley, thyme, or basil to the breadcrumb mixture for an extra layer of flavor.
- Add a pinch of cayenne pepper or chili flakes to the breadcrumb mixture for a spicy kick.
- For extra flavor, serve the scallops with a side of melted garlic butter for dipping.
