Description

These Breaded Sea Scallops are a delicious and easy-to-make seafood dish that’s crispy on the outside and tender on the inside. Coated in a mixture of mashed potato flakes, seasoned bread crumbs, and a hint of salt and pepper, these scallops are pan-fried to golden perfection. Whether you’re serving them as an appetizer or a main dish, these breaded scallops are sure to impress.

Ingredients

1 large egg

1/3 cup mashed potato flakes

1/3 cup seasoned bread crumbs

1/8 teaspoon salt

1/8 teaspoon pepper

6 sea scallops (about 3/4 pound)

2 tablespoons all-purpose flour

2 tablespoons butter

1 tablespoon canola oil

Instructions

  1. In a shallow bowl, lightly beat the egg. In another bowl, toss the mashed potato flakes and bread crumbs with salt and pepper. In a third bowl, toss the scallops with flour to lightly coat them.
  2. Dip each scallop into the flour, then into the beaten egg, and finally into the potato-flake and bread crumb mixture. Pat the crumbs onto the scallops to ensure they adhere well.
  3. In a large skillet, heat the butter and canola oil over medium heat. Add the breaded scallops to the pan and cook for 2-3 minutes per side, or until golden brown and firm to the touch. The scallops should be opaque in the center when fully cooked.
  4. Remove the scallops from the skillet and serve immediately.

Notes

  • Add fresh herbs like parsley, thyme, or basil to the breadcrumb mixture for an extra layer of flavor.
  • Add a pinch of cayenne pepper or chili flakes to the breadcrumb mixture for a spicy kick.
  • For extra flavor, serve the scallops with a side of melted garlic butter for dipping.
