Description

Ingredients

250 ml water (lukewarm)

8 g instant yeast

12 g honey

35 ml sunflower oil

400 g flour

50 g fine semolina

8 g salt

20 g butter

1 egg (for egg wash)

Sesame seeds (for garnish)

400 g ground beef

4 g salt

3 g cumin powder

2 g garlic powder

3 g ras el hanout (a Moroccan spice blend)

2 g black pepper

2 g cayenne powder

10 g fresh parsley (chopped)

100 g yellow onion (finely chopped)

50 g tomato (chopped)

30 ml olive oil

Cheese spread

Slices of cheese (e.g., cheddar or Gouda)

Grated cheese (for topping)


Instructions

  1. Prepare the Dough: In a bowl, combine lukewarm water, instant yeast, and honey. Stir well and let it rest for 5 minutes. Add sunflower oil, flour, fine semolina, salt, and butter. Knead the dough for 10-12 minutes until smooth. Cover and let rise for 1 hour until doubled in size.
  2. Prepare the Beef Mixture: In a bowl, combine the ground beef, salt, cumin powder, garlic powder, ras el hanout, black pepper, cayenne powder, parsley, onion, tomato, and olive oil. Mix well and set aside.
  3. Shape the Buns: Once the dough has risen, divide it into 12 equal pieces (about 60 grams each). Shape each piece into a ball, then roll each into a flat circle on a floured surface.
  4. Assemble the Buns: On half of the dough circles, place a slice of cheese, leaving the edges free. Spoon a portion of the beef mixture over the cheese and add a dollop of cheese spread on top. Cover with the second dough circle and press the edges down firmly to seal the filling inside.
  5. Let the Dough Rise: Place the filled buns on a parchment-lined tray. Spread a thin layer of cheese spread on top of each bun and sprinkle with grated cheese. Let the buns rise for 30 minutes until doubled in size.
  6. Bake the Buns: Preheat the oven to 200°C (400°F). Bake for 15-20 minutes, or until golden brown. For a crisp bottom, place the tray slightly lower in the oven.
  7. Serve: Let the buns cool slightly before serving.
