Ingredients
3/4 cup extra-virgin olive oil
7 to 8 cups stale bread crust trimmings
Kosher salt, to taste
Freshly ground black pepper, to taste
1/4 cup finely grated Parmesan
2 tbsp fresh thyme leaves
Instructions
- Preheat oven to 350°F (175°C).
 - In a large bowl, drizzle olive oil over the bread crusts.
 - Season with salt and pepper, then toss gently to coat.
 - Add Parmesan and thyme, tossing until evenly coated.
 - Spread crusts in a single layer on 2 baking sheets. Sprinkle any remaining cheese and thyme on top.
 - Bake for 20 minutes, tossing halfway, until golden and crunchy.
 - Let cool completely before serving.
