Description

Ingredients

3/4 cup extra-virgin olive oil

7 to 8 cups stale bread crust trimmings

Kosher salt, to taste

Freshly ground black pepper, to taste

1/4 cup finely grated Parmesan

2 tbsp fresh thyme leaves


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, drizzle olive oil over the bread crusts.
  3. Season with salt and pepper, then toss gently to coat.
  4. Add Parmesan and thyme, tossing until evenly coated.
  5. Spread crusts in a single layer on 2 baking sheets. Sprinkle any remaining cheese and thyme on top.
  6. Bake for 20 minutes, tossing halfway, until golden and crunchy.
  7. Let cool completely before serving.
