Description
Boiled Potatoes with Fresh Herbs are a simple yet elegant side dish of tender yellow potatoes tossed in fresh mint and basil, lightly seasoned with olive oil and salt—perfect for any meal.
Ingredients
1 lb small yellow potatoes (e.g., fingerlings)
Salt (for seasoning the cooking water)
1 tsp extra-virgin olive oil
½ tsp kosher or sea salt (or to taste)
4 mint leaves, thinly sliced
4 basil leaves, thinly sliced
Instructions
- Place potatoes in a large saucepan. Cover with cold water by about 1 inch. Generously salt the water and bring to a boil.
- Cook until tender (15–20 minutes depending on size). Test doneness with a fork.
- Drain well in a colander.
- Transfer potatoes to a bowl. Add olive oil, salt, sliced mint, and basil. Toss gently to combine.
- Serve warm or at room temperature.
Notes
- For extra flavor, add chopped chives, parsley, or dill.
- Add a squeeze of lemon juice or lemon zest before serving for a citrusy finish.
- If you prefer, peel the potatoes before cooking, but leaving the skins adds texture and flavor.
