Blackberry Chip Overnight Oats combine creamy oats, mini chocolate chips, and tangy blackberry sauce for a make-ahead breakfast that’s nutritious, flavorful, and perfect for busy mornings.
Ingredients
1 cup old-fashioned rolled oats
1 cup milk (cow, almond, coconut, etc.), plus more for drizzling
1 tbsp chia seeds
1 tbsp hemp hearts
2 tsp honey or maple syrup
1/2 tsp vanilla extract
1/4 tsp salt
1/4 cup mini chocolate chips, plus more for topping
2 cups fresh or frozen blackberries
1 tbsp honey
1 tsp fresh lemon juice
Instructions
- In a bowl, stir together oats, milk, chia seeds, hemp hearts, sweetener, vanilla, salt, and mini chocolate chips. Cover and refrigerate for at least 4 hours or overnight.
- In a saucepan over medium-low heat, combine blackberries, honey, and lemon juice. Cook, stirring occasionally, for about 10 minutes until berries break down into sauce. Remove from heat and cool completely. Store in fridge up to 3 days.
- To serve, spoon some blackberry sauce into a bowl or jar, add half the oats, more sauce, and sprinkle extra chocolate chips if desired. Stir before eating.
