Ingredients
2 lb beef stew meat or sirloin tips, cut into bite-sized pieces
1 tsp salt
½ tsp black pepper
2 Tbsp all-purpose flour
2 Tbsp olive oil
1 medium onion, finely chopped
3–4 garlic cloves, minced
1 Tbsp tomato paste
½ cup red wine
1 cup beef broth
1½ cups water
2 Tbsp Worcestershire sauce
2 Tbsp soy sauce (optional)
1 tsp dried thyme
1 tsp paprika
1 bay leaf (optional)
1 Tbsp cornstarch mixed with 2 Tbsp cold water (slurry)
12 oz wide egg noodles
1 Tbsp butter (optional, for noodles)
Fresh parsley, chopped (for garnish)
Instructions
- Pat beef dry, season with salt and pepper, then coat lightly with flour.
- Heat oil in a large skillet or Dutch oven over medium-high. Sear beef in batches until browned, 4–5 minutes per batch. Remove beef.
- In same pot, sauté onion until translucent, ~4–5 minutes. Add garlic and cook another 1–2 minutes.
- Stir in tomato paste and cook 1 minute. Deglaze with red wine, scraping browned bits.
- Add beef broth, water, Worcestershire, soy (if using), thyme, paprika, and bay leaf. Bring to a simmer.
- Return beef to pot, reduce heat to low, cover, and simmer for 1½–2 hours until tender.
- Remove bay leaf. Stir in cornstarch slurry and simmer until gravy thickens.
- While beef simmers, cook egg noodles per package instructions. Drain and toss with butter if desired.
- Serve beef tips and gravy over noodles. Garnish with parsley and enjoy.
