- Preheat oven to 400 °F and line two baking sheets with parchment paper.
- Heat olive oil in a skillet over medium-high heat. Sauté onion for 3 minutes, then add garlic and cook 1 more minute.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in taco seasoning and water. Simmer for 3 minutes until thickened.
- Spread tortilla chips on baking sheets. Top with seasoned beef and shredded cheeses. Add jalapeños or beans if desired.
- Bake for 10–15 minutes until cheese is melted and bubbly.
- Remove from oven and top with fresh diced tomatoes and green onions.
- Serve hot with salsa, sour cream, and guacamole on the side.
Notes
- Use homemade taco seasoning for more control over flavor.
- Swap beef for shredded chicken, turkey, or a vegetarian option.
- Keep toppings like salsa and sour cream on the side to prevent sogginess.
- Cheeses like pepper jack or queso fresco add variety.
- Make ahead by prepping beef, then assembling and baking fresh.
