Description

Crispy tortilla chips topped with savory seasoned ground beef and melted cheese, these Beef Nachos are a flavorful, shareable dish perfect for parties, game days, or casual meals.

Ingredients

1 tablespoon olive oil

½ onion, finely diced

1 clove garlic, minced

1 lb ground beef

1 (1 oz) packet taco seasoning

¼ cup water

2 (16 oz) bags tortilla chips

2 cups shredded cheddar cheese

2 cups shredded Monterey Jack cheese

Optional toppings: sliced jalapeños, diced tomatoes, beans, sliced green onions, salsa, sour cream, guacamole

Instructions

  1. Preheat oven to 400 °F and line two baking sheets with parchment paper.
  2. Heat olive oil in a skillet over medium-high heat. Sauté onion for 3 minutes, then add garlic and cook 1 more minute.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in taco seasoning and water. Simmer for 3 minutes until thickened.
  5. Spread tortilla chips on baking sheets. Top with seasoned beef and shredded cheeses. Add jalapeños or beans if desired.
  6. Bake for 10–15 minutes until cheese is melted and bubbly.
  7. Remove from oven and top with fresh diced tomatoes and green onions.
  8. Serve hot with salsa, sour cream, and guacamole on the side.

Notes

  • Use homemade taco seasoning for more control over flavor.
  • Swap beef for shredded chicken, turkey, or a vegetarian option.
  • Keep toppings like salsa and sour cream on the side to prevent sogginess.
  • Cheeses like pepper jack or queso fresco add variety.
  • Make ahead by prepping beef, then assembling and baking fresh.
