Description

Ingredients

1 pound ground beef

1 cup uncooked minute rice

1 medium yellow onion, diced

8 ounces mushrooms, chopped

10.5 ounces cream of mushroom soup

½ cup sour cream

1 cup beef broth

1 sleeve Ritz crackers, crumbled

¼ cup butter, melted


Instructions

  1. Preheat oven to 350°F. In a skillet over medium-high heat, cook ground beef with onion and mushrooms until browned. Drain fat.
  2. Transfer to a 9×13-inch casserole dish. Stir in cream of mushroom soup, sour cream, rice, and broth.
  3. Top evenly with crumbled Ritz crackers and drizzle melted butter over the top.
  4. Bake uncovered for 30–40 minutes, until rice is tender and topping is golden.
