Description
A gourmet twist on classic grilled cheese featuring creamy brie, tangy balsamic-blackberry reduction, and golden buttery sourdough bread. Perfect for lunch, brunch, or a light dinner.
Ingredients
4 slices sourdough or artisan bread
1 cup fresh blackberries
1 tbsp balsamic vinegar
1 tbsp honey
4 oz brie cheese, thinly sliced
2 tbsp butter, softened
Pinch of salt
Instructions
- In a small saucepan over medium heat, combine blackberries, balsamic vinegar, honey, and salt. Mash and stir occasionally until thickened, about 5 minutes. Remove from heat and let cool slightly.
 - Heat a non-stick skillet over medium-low heat.
 - Butter one side of each bread slice.
 - Place two slices, buttered-side down, in the skillet.
 - Layer with brie, a spoonful of blackberry mixture, and another layer of brie.
 - Top with remaining bread slices, buttered-side up.
 - Cook 2–3 minutes per side, pressing gently, until golden brown and cheese is melted.
 - Rest for 1 minute, slice diagonally, and serve warm.
 
Notes
- Goat cheese or camembert can replace brie.
 - Add fresh basil or arugula for a peppery bite.
 - Swap blackberries for raspberries, blueberries, or figs.
 - Drizzle with extra balsamic reduction before serving.
 - Try whole wheat or rye bread for a heartier flavor.
