Crust Mixture

Instructions
- Preheat and Prepare Crust: Preheat the oven to 400ºF and line a baking sheet with parchment paper or foil. In a shallow bowl, combine the panko bread crumbs, parmesan cheese, chopped parsley, dill, chives, and lemon zest, mixing well to create the crust mixture.
- Prepare the Halibut: Rinse the halibut fillets under cold water and gently pat them dry with a paper towel. Place the fillets onto the prepared baking sheet. Drizzle olive oil on both sides of each fillet, rubbing it in to coat thoroughly.
- Coat with Crust: Press each oiled halibut fillet into the bread crumb and parmesan mixture, ensuring an even, light coating on the front side. Then place the crust-coated fillets back onto the baking sheet, crust side up.
- Bake the Fish: Bake the fillets in the preheated oven for 10 to 15 minutes, or until the crust is lightly browned and the fish flakes easily when tested with a fork.
- Season and Serve: Taste the baked halibut and season with salt and pepper as needed, noting that the parmesan cheese in the crust already adds saltiness. Serve immediately for best flavor and texture.
