Description

This Apple Spice Cake is a warm and tender delight filled with fragrant spices and fresh grated apples, topped with a rich brown sugar icing. Perfect for cozy fall mornings, afternoon treats, or a comforting dessert.


Ingredients

2¼ cups all-purpose flour

1½ teaspoons baking soda

1 teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground ginger

½ teaspoon ground nutmeg

½ teaspoon ground allspice

⅛ teaspoon ground cloves

⅔ cup vegetable oil

2 large eggs, room temperature

¾ cup brown sugar (light or dark), packed

¾ cup granulated sugar

½ cup sour cream, room temperature

1 teaspoon vanilla extract

1½ cups grated apples (23 large, skin-on optional)

¼ cup salted butter

½ cup dark brown sugar, packed

2 tablespoons heavy cream

½ teaspoon vanilla extract (for icing)

1 cup powdered sugar, sifted


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round pan.
  2. Whisk flour, baking soda, salt, cinnamon, ginger, nutmeg, allspice, and cloves in a bowl.
  3. In another bowl, whisk oil, eggs, brown sugar, granulated sugar, sour cream, and vanilla until smooth.
  4. Stir in dry ingredients until just combined. Fold in grated apples.
  5. Pour into prepared pan and bake 35–40 minutes, until a toothpick comes out clean.
  6. Cool 10 minutes in the pan, then transfer to a rack to cool completely.
  7. For icing, melt butter and brown sugar over medium heat. Stir in cream and vanilla. Simmer briefly and remove from heat. Whisk in powdered sugar until smooth.
  8. Pour icing over cooled cake, spreading evenly. Let set before slicing.
