These Apple Crisp Cookie Cups combine the warm, comforting flavors of apple crisp with the fun, handheld convenience of a cookie cup. Made with spiced apple filling and a buttery sugar cookie crust, they are perfect as a dessert or an indulgent snack.
Ingredients
Apple Filling
- 5 medium Granny Smith apples, peeled and diced into ¼ inch pieces
- 1 teaspoon cinnamon
- ¼ cup white granulated sugar
- ¼ cup brown sugar
- ¼ teaspoon nutmeg
- 1 tablespoon cornstarch
- 2 tablespoons butter
- ½ cup water
Cookie Cups
- 16.5 ounces refrigerated sugar cookie dough
- Butter or non-stick cooking spray (to grease muffin pan)
Instructions
- Prepare Apples: Peel and dice the apples into quarter-inch pieces. In a large mixing bowl, toss the apples with cinnamon, nutmeg, cornstarch, brown sugar, and white sugar until evenly coated.
- Cook Apple Mixture: Heat a large skillet over medium heat and melt the butter. Add the apple mixture and cook for 2-3 minutes until the apples begin to soften.
- Add Water and Simmer: Pour in the water and continue cooking over medium heat for about 10 minutes, stirring frequently, until the apples caramelize and the liquid thickens. Remove from heat and set aside.
- Preheat Oven and Prepare Muffin Pan: Preheat your oven to 350°F (175°C). Grease a muffin tin with butter or cooking spray to prevent sticking.
- Form Cookie Cups: Scoop about 1 ½ tablespoons of cookie dough into each muffin cup. Press the dough evenly on the bottom and mold it up the sides reaching about three-quarters up the tin. The dough layer will be thin but will thicken upon baking.
- Bake Cookie Cups: Bake for 11-12 minutes or until the dough edges turn a light golden brown. Allow the cookie cups to cool in the pan for 10 minutes.
- Cool and Remove: Gently loosen cookie cups using a spatula or butter knife and transfer them to a wire cooling rack. Let them cool completely for about 20 minutes.
- Fill and Serve: Spoon the prepared apple filling into each cookie cup. Serve the cups cold or warm according to preference and enjoy!
