Ingredients

Apple Filling

  • 5 medium Granny Smith apples, peeled and diced into ¼ inch pieces
  • 1 teaspoon cinnamon
  • ¼ cup white granulated sugar
  • ¼ cup brown sugar
  • ¼ teaspoon nutmeg
  • 1 tablespoon cornstarch
  • 2 tablespoons butter
  • ½ cup water

Cookie Cups

  • 16.5 ounces refrigerated sugar cookie dough
  • Butter or non-stick cooking spray (to grease muffin pan)


Instructions

  1. Prepare Apples: Peel and dice the apples into quarter-inch pieces. In a large mixing bowl, toss the apples with cinnamon, nutmeg, cornstarch, brown sugar, and white sugar until evenly coated.
  2. Cook Apple Mixture: Heat a large skillet over medium heat and melt the butter. Add the apple mixture and cook for 2-3 minutes until the apples begin to soften.
  3. Add Water and Simmer: Pour in the water and continue cooking over medium heat for about 10 minutes, stirring frequently, until the apples caramelize and the liquid thickens. Remove from heat and set aside.
  4. Preheat Oven and Prepare Muffin Pan: Preheat your oven to 350°F (175°C). Grease a muffin tin with butter or cooking spray to prevent sticking.
  5. Form Cookie Cups: Scoop about 1 ½ tablespoons of cookie dough into each muffin cup. Press the dough evenly on the bottom and mold it up the sides reaching about three-quarters up the tin. The dough layer will be thin but will thicken upon baking.
  6. Bake Cookie Cups: Bake for 11-12 minutes or until the dough edges turn a light golden brown. Allow the cookie cups to cool in the pan for 10 minutes.
  7. Cool and Remove: Gently loosen cookie cups using a spatula or butter knife and transfer them to a wire cooling rack. Let them cool completely for about 20 minutes.
  8. Fill and Serve: Spoon the prepared apple filling into each cookie cup. Serve the cups cold or warm according to preference and enjoy!
