Description

Ingredients

2 boneless, skinless chicken breasts

1 honeycrisp apple, cored and thinly sliced

1 wedge brie cheese, sliced

Salt and pepper, to taste

Olive oil, for searing

2 tablespoons maple syrup

1 teaspoon dijon mustard

¼ teaspoon dried thyme

1 garlic clove, minced


Instructions

  1. Whisk maple syrup, dijon mustard, thyme, and garlic in a small bowl. Set aside.
  2. Preheat oven to 400°F (200°C).
  3. Cut a pocket into each chicken breast, about ¾ of the way through. Season with salt and pepper.
  4. Heat an oven-safe skillet over medium-high heat with olive oil. Sear chicken 2–3 minutes per side until golden. Remove from skillet.
  5. Stuff chicken with apple slices and brie, securing with toothpicks if needed.
  6. Return chicken to skillet, brush with glaze, and transfer to oven.
  7. Bake 20–22 minutes, or until internal temperature reaches 165°F (74°C).
  8. Drizzle with extra glaze and serve warm.

  • Granny Smith, Fuji, or Gala apples can be substituted for Honeycrisp.
  • Use fresh thyme or rosemary for a more aromatic flavor.
