Instructions
- Cook the chicken: Heat 1 tablespoon of neutral oil in a large nonstick skillet over medium-high heat. Add the ground chicken and season with fine sea salt and freshly-ground black pepper. Cook, breaking the meat up with a wooden spoon, until browned and fully cooked through. Transfer the cooked chicken to a clean bowl and set aside.
- Sauté aromatics and cole slaw: In the same skillet, add the remaining 1 tablespoon of oil along with the white parts of the scallions, minced garlic, and grated fresh ginger. Stir constantly and sauté for about 1 minute until fragrant. Add the bag of cole slaw and continue to sauté for 2 minutes, stirring occasionally, until the cole slaw is slightly wilted.
- Cook the eggs: Push the cole slaw mixture to one side of the skillet. Pour the whisked eggs into the empty side and cook them, stirring and breaking them into small pieces, until fully scrambled and cooked through.
- Combine all ingredients: Return the cooked ground chicken to the skillet. Add the hoisin sauce, low-sodium soy sauce, toasted sesame oil, and the green parts of the scallions. Toss or stir everything together until evenly combined and heated through. Adjust seasoning with additional hoisin or soy sauce, if desired.
- Serve: Spoon the egg roll mixture over cooked rice or noodles if using. Sprinkle generously with furikake seasoning or toasted sesame seeds. Serve warm and enjoy your quick and delicious egg roll bowl!
